5. Cover the bowl with cling film and put the mix in the fridge for at least 1 hour (can be up to 2 hours)
6. Scoop out the dough onto the baking tray - around 1 heaped tablespoon of dough per cookie - flatten down slightly
7. Bake at 200 degrees Celsius (in a fan oven) for around 10-15 minutes, until golden brown
8. Let the cookies cool fully before eating - they are best enjoyed cool!!
